Rogan Josh is one of the signature and staple dish of Kashmir and one of the main dishes of Kashmir's main course meal ‘the wazwan’. It is traditionally made with lamb or goat. This dish is a good balance of aromatic spices, herbs such as garlic and ginger, onions, clarified butter (ghee). Our spice mix and the method of cooking will be bring the authentic taste of Kashmir to your kitchen.

 

This is a medium spiced dish that goes well with naans, rotis or Anchan's butter rice.

Rogan Josh

Ingredients  (for 2-3 servings use half the quantities mentioned below) 

750      grams lamb shoulder cut into medium size pieces

2           onions medium size finely chopped

2           fresh tomatoes medium sized blended (180ml) or 200ml passata

1.5         tbsp ginger garlic paste or 1.5 inch ginger (16g) and 4 large garlic

             cloves (16g) finely grated

2           tbsp fresh coriander leaves finely chopped (optional)

3           tbsp clarified butter (ghee) or any flavourless oil

2           tbsp double cream 

1            tsp salt or salt or taste

100       ml yogurt (whisk yogurt using a fork for a smooth texture)

Cooking steps (for 2-3 servings use half the quantities mentioned below) 

  • In a pot heat clarified butter, add 2 packs of Anchan's spice mix 1 and cook for 10 seconds.

  • Add finely chopped onions, half teaspoon of salt and cook stirring regularly until onions are golden brown.

  • Add ginger garlic paste, cook for a minute.

  • Add 2 packs of Anchan's spice mix 2, 50 ml of water, cook for a minute.

  • Add blended tomato or passata, cook for 5-6 minutes stirring regularly.

  • Add lamb pieces, half teaspoon of salt or salt to taste, cook for 5 minutes.

  • Turn the heat to low, add yogurt, mix well.

  • Add 200 ml of water, bring it to a simmer. Cover and cook on low heat for 45-60 minutes or until lamb is almost cooked

  • Add 2 packs of Anchan's spice mix 3 and cream, mix well. Cover and cook for 5 minutes.

  • Add coriander leaves (optional) give a quick stir and turn off the heat.
