Tikka Masala

(for 2-3 servings use half the quantities mentioned below)

For Marination

• 1 kg boneless chicken thigh cut into medium size pieces
• 5 tbsp greek yoghurt
• 1 tbsp ginger garlic paste or 1"ginger (10 g) and 3 large of garlic cloves (10 g) finely grated.
• 1 tbsp lemon juice
• 2 tbsp mustard oil (recommended) or any flavourless oil
• 1 1/4  tsp salt

For Sauce

• 4 tbsp rapeseed oil or any flavourless oil
• 3 onions medium size finely chopped
• 3 tomatoes medium size blended (200 ml) or 250 ml passata
• 2 tbsp ginger garlic paste or 2" ginger (20 g) and 5 large garlic cloves (20 g) finely grated
• 2 tbsp fresh coriander leaves finely chopped (optional)
• 120 ml  double cream
• 250 ml water
• 1 tsp salt or salt to taste
