This dish originates from Bengal province of India. The word ‘Bhuna’ implies frying. In this recipe, onion and tomatoes are fried really well until the oil becomes visible from the sides of the pan. Secret to this dish is to allow the meat, onions, tomatoes and spices to be cooked in their own juices. This results in a medium heat, thick and intensely flavoured dish.  

 

This is a medium spiced dish that goes well with rice and breads.

CHICKEN BHUNA

Ingredients (for 2-3 servings use half the quantities mentioned below) 

1        kg chicken thigh or lamb cut into medium size pieces

4       tbsp rapeseed oil or any flavourless oil


3       onions medium size finely chopped


3       fresh tomatoes medium size finely chopped or 200 ml of passata


2       tbsp ginger garlic paste or 5 large garlic cloves (20g) and 2 inch ginger
         (20g) finely grated


2       tbsp coriander leaves finely chopped (optional)


2       tsp salt or salt to taste


1        green chillies cut lengthwise and deseeded (optional)


100   ml yogurt (whisk yogurt using a fork for creamy and smooth texture)

Cooking Steps (for 2-3 servings use half the quantities mentioned below)

  • In a deep wide pan heat 4 tbsp of oil , add 2 packs of Anchan's spice mix 1 and cook for 10 seconds.

  • Add finely chopped onions and 1 tsp of salt, cook until onions are light golden brown.

  • Add ginger garlic paste, green chilli (optional), cook for a minute.

  • Add 2 packs of Anchan's spice mix 2 and 50 ml of water, cook for a minute.

  • Add finely chopped tomatoes or passata and cook for 5-6 minutes.

  • Add chicken or lamb pieces and 1 tsp of salt or salt to taste, mix well. Cook for 5 minutes stirring regularly.

  • Add whisked yogurt, mix well. Cover and cook until chicken is almost cooked. If cooking lamb add 150 ml of water cover and cook for 45-60 min or until the lamb is almost cooked.

  • Add 2 packs of Anchan's spice mix 3, cover and cook for 5 minutes or until the chicken or lamb is cooked.​

 

  • Garnish with coriander leaves (optional).
